Ingredients
1 tbsp olive oil 🍃
1 medium onion, diced 🧅
2 garlic cloves, minced 🧄
1 tbsp grated fresh ginger ✨
1 tbsp curry powder
1 tsp ground turmeric ✨
1/2 tsp ground cumin
1 medium sweet potato, peeled and diced 🍠
1 cup (200g) red lentils, rinsed 🌱
1 can (400ml) coconut milk 🥥
2 cups (500ml) vegetable stock 🥣
1 handful of spinach leaves 🥬
Juice of 1/2 lemon 🍋
Salt and pepper to taste 🧂
Fresh cilantro for garnish (optional) 🌿
Instructions
Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add onion and sauté until softened, about 3-4 minutes. Stir in garlic, ginger, curry powder, turmeric, and cumin, cooking for another minute until fragrant.
Add the Sweet Potato & Lentils: Stir in the diced sweet potato and red lentils, coating them in the spice mixture.
Simmer: Pour in the coconut milk and vegetable stock. Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the lentils are tender and the sweet potato is soft.
Add Spinach: Stir in the spinach leaves and cook for 2-3 minutes until wilted.
Finish with Lemon Juice: Squeeze in the lemon juice and season with salt and pepper to taste.
Serve: Ladle the curry into bowls and garnish with fresh cilantro if desired. Pair with rice, quinoa, or enjoy as is!
