Ingredients (Serves 4)
1 cup (200g) red lentils, rinsed
1 tbsp coconut oil
1 onion, finely chopped
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp turmeric powder
1 tsp ground cumin
½ tsp ground coriander
400ml coconut milk (1 can)
2 cups (500ml) vegetable stock
1 cup chopped tomatoes (fresh or canned)
2 cups fresh spinach leaves
Juice of ½ a lemon
Salt and pepper to taste
Optional Toppings:
Fresh coriander leaves
A dollop of plain coconut yogurt
A sprinkle of chilli flakes (if you like it spicy)
Instructions
Sauté the Aromatics: Heat coconut oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant and golden, about 3–4 minutes.
Add the Spices: Stir in turmeric, cumin, and coriander, cooking for 1 minute to release their aromas.
Cook the Lentils: Add rinsed lentils, chopped tomatoes, coconut milk, and vegetable stock. Stir well, bring to a boil, then reduce heat to a simmer. Cover and cook for 20–25 minutes, stirring occasionally, until the lentils are tender.
Add the Greens: Stir in the spinach and cook for 2–3 minutes until wilted. Squeeze in fresh lemon juice and season with salt and pepper to taste.
Serve and enjoy: Ladle the curry into bowls and top with fresh coriander, coconut yogurt, or chilli flakes if desired. Serve with warm naan bread or fluffy basmati rice.
