Lemon Garlic Chicken with Roasted Vegetables

Ingredients (Serves 4)

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • For the Roasted Vegetables:
  • 2 cups (300g) broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, quartered
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional Garnish:
  • Fresh parsley, chopped
  • Lemon wedges

Instructions

  1. Marinate the Chicken:
    In a small bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Pour over the chicken breasts and let marinate for at least 20 minutes (or up to 2 hours in the fridge).
  2. Prepare the Vegetables:
    Preheat the oven to 200°C (400°F). Toss the broccoli, bell pepper, zucchini, and onion with olive oil, thyme, salt, and pepper. Spread the vegetables on a baking tray lined with parchment paper.
  3. Cook the Chicken and Veggies:
    Heat a grill pan or large skillet over medium heat. Cook the chicken for 6–8 minutes per side, or until fully cooked and golden brown. Meanwhile, roast the vegetables in the oven for 20–25 minutes, tossing halfway through, until tender and slightly caramelised.
  4. Serve and Enjoy:
    Plate the chicken alongside the roasted vegetables. Garnish with fresh parsley and a squeeze of lemon juice for extra zing.
