Ingredients (Serves 2)
For the Salmon:
2 salmon fillets (150g each)
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 garlic clove, minced
1 tsp dried oregano
Salt and pepper to taste
For the Quinoa Salad:
1 cup cooked quinoa
1 cup mixed greens (spinach, arugula, or kale)
½ cup cherry tomatoes, halved
¼ cucumber, diced
2 tbsp fresh parsley, chopped
1 tbsp olive oil
1 tbsp fresh lemon juice
Salt and pepper to taste
Optional Toppings:
Sliced avocado
Toasted pumpkin seeds
A sprinkle of chilli flakes (for a spicy kick)
Instructions
Marinate the Salmon: In a small bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Pour over the salmon fillets and let them marinate for 15–20 minutes.
